The most cherished and precious figure in any family is grandma. The name SETO (grandma in Arabic) is a tribute to my mother who passed on her skills of Mediterranean culinary cuisine and the love of baking.

I envisioned a home-style bakehouse honoring my heritage and using my ancestors’ recipes with a touch of innovation. All baking is made with the highest quality ingredients and done fresh out of the oven.

A best-seller and one of Eman’s top favorites. Basbousa literally means ‘just a kiss’, it is a syrupy sweet semolina cake with a notable buttery flavor, a lovely spongy sandy texture, made extra moist with a generous shower of sugar syrup.

Egyptian traditional cookies. These sweet-not-too-sweet cookies are crunchy and filled with cinnamon sugar and topped with a generous amount of sesame seeds.

The double crust is shatteringly crisp and neat, sturdy enough to hold all the filling but somehow still tender and flaky. I've seen a lot of decorative pie crusts before baking, but it's rare that one looks this gorgeous after baking. The filling is everything I love about fall - heavily perfumed with cinnamon and warm spices and gooey filling (no runniness at all!) all the way to the top crust. The apples similarly find that perfect balance between structural integrity and tenderness - juicy yet firm and somehow avoiding that dreaded applesauce consistency that you find in so many pies.
